It's that time of year again when peeps are on the menu. Peeps, those little birds full of cushiony marshmallow and coasted with the sugariest of colored sugar, come in all shapes and colors. Join Claire Saffitz in the Bon Apptit Test Kitchen as she attempts to make a gourmet version of peeps Check out Claire's Instagram: Watch the TODAY clip on how peeps are made

I like to roast my peeps (bunnies for the win. The outside gets all crusty and crackly and the inside is all melty. Also, it is so cool (to me) that I know some of this plant and animal stuff that you guys talk about learning while making the videos. Like the marshmallow plant I'm not intelligent by any stretch of the imagination, so knowing weird facts most people don't is my only claim to being useful. It's so much fun when that (rarely) happens.

I mean it sounds at first glance like a basic marshmallow recipe--eggwhite is all well and good but a standard recipe is less allergenic, which I like, and SUPER fast and easy to whip together. Also easily amended with flavoring (I've made peppermint vanilla, root beer, and almond flavored marshmallows with the same basic recipe)

I understand Claire's struggle with clogged ears. Every few years I get congestion that totally messes with my hearing (once both of my eardrums were burst and I could barely hear. It sucks and you've just gotta wait it out most times (or use a waterpik with a couple drops of peroxide to clean your ear sometimes. I feel you

I feel like Claire and I would be good friends. Her reaction to them saying that love is an ingredient in Peeps was the exact same to mine. Also when she says today's going to be a wrap up day and finishing touches and I see we're only half way through the video. poor Claire

I feel like if you put the coloring IN the marshmallow then it would look so melty. And for the sugar texture on the outside use a spice blender to make granulated sugar fiber and put it over the marshmallow. You have a vibrant color and the sugar texture

The best way to eat a peep: spear it on a bamboo skewer and toast it on the stove. Immediately hold it in the freezer for the melted sugar to harden into a shell: gently pull the shell off and savor the delight it is. Repeat until peep is gone.

For ear uncloging - just try to say aaa. and move your lower jaw in every posible direction at the same time. That way you balance air presure from both sides of your ear. You have to rest for couple minutes before your next atempt.
