driving 20 minutes to get Rotis. Please. I am Indian and I can confirm that making a fresh roti literally from scratch takes 10 minutes in total. METHOD: add a cup of flour(whole wheat preferred/ whatever you get your hands on) into the food processor. add very little quantity of water in it and blitz. keep on adding water in very small proportions at 10 second intervals. within a minute or so your dough is ready. how do you know it is ready. [ IT WILL TAKE THE SHAPE OF A BALL ]. Take it out, get a small portion of dough, roll it flat. if it is not round. NO FREAKING problem. heat the roti on a skillet, pan, whatever you got. THATS IT. If you want to get a video demonstration let me know. I GUARANTEE 5 minutes in and you yourself would be making rotis for you and your family.

I think dishes like this represent the best parts of migrant/ethnic resiliency in the face of pressure to assimilate. As kids all you want is to fit in so you ask your parents to do things that they wouldnt normally do so they have to negotiate giving their children the tools to thrive and succeed in a world that puts a premium on conforming to the majority but at the same time fostering a foundation and appreciation for this cultural history and identity. It reminds me of making tortillas with my grandmother and washing the corn husks for my tias to make tamales. And being thrilled when you graduated to making the masa and really feel like youre contributing.

I can attest to the rotti lady, we have a pan dulce and tamales lady and that's my mom and dad lol my parents also tried thier best to provide the best they could and pizza was one we'd also ask for so they would make dough from mexican style tellera(sandwich) bread and sauce from how they would imagine it would be along with the toppings and to this day I love thiers more than any other Love them and thier amayzing food

No offence, Priya seems lovely but I wish she did better justice to Indian cooking like how Rick does justice to Mexican food. A lot of Priya's dishes seem like westernised versions of snacks with a slight Indian influence when there are so many incredible authentic Indian snacks she could be showcasing - like pani puri, or chaat or dabeli etc

Priya's videos give a natural This feels awkward, I'll add quarky humor to this situation. It's absolutely infectious to laugh along. Gives the feel that really anyone can be in the test kitchen, as long as you have a passion for food and a general understanding of what to do in a kitchen.

I think the question of whether naan or roti is the more prevalent staple is largely dependent on whether you're talking north or south Indian cuisine. (And the vast majority of US Indian restaurants are specifically north Indian, so judging by restaurants here isn't really helpful)

I thought it was just me, lol. I am of indian origin, and I take my roti, put it on thw tawa and add toppings on it and cover it with a pot cover so the cheese melts: ) Roti pizza Love teh addition of chutney, I will try this recipe but do it on a tawa as its much faster.

Please try a slice of pizza from Sliver in Berkeley, CA. Its vegetarian pizza and they have different toppings everyday of the week (potato and corn day is a must) but their chutney is amazing, this recipe reminds me so much of Sliver.

Priya, try making this in a cast iron pan. brush oil on the bottom of the roti, cover it for the first few minutes to melt the cheese, then let it crisp up. you can also oil both sides and crispen it on both sides. like how I like it.
