Nacho cheese exists in two states: the melted cheese state and the powdered cheese state. When it comes to the powdered cheese state, all pale in comparison to Nacho Cheese Doritos, continually perfected by science and consistently beloved by the masses since 1972. Join pastry chef Claire Saffitz in the Bon Apptit Test Kitchen as she attempts to take Nacho Cheese Doritos to the next level and make them gourmet The third state of nacho cheese, cheese sauce, is controversial in the nacho community and for our purposes we are disregarding it. This is irritating me because she is not putting in baking soda and baking powder so she is making flat bread and as a pastry chef she should know this arrrrrgggggghhhhhhhh, and the worst part is I see Hispanics in the background they should tell her. For 1 lb of corn masa you put in 1 tsp baking powder and 2 tsp baking soda and your chips will blow up. We make corn chips all the time here in Texas.

Just my luck, I've been waiting for a dorito episode since this series started because I wanted to know exactly how to make cool ranch seasoning so I can put it on everything. and then she makes the nacho cheese flavor instead: Should really do a bonus episode and try and figure it out, I need me some cool ranch seasoning

The combination of monosodium glutamate, salt and maltodextrin is what makes these snacks so addictive. You might as well sprinkle that stuff on wet toilet paper and it would be delicious once dried crispy. (I'm exaggerating of course, but snacks are basically that: bland sheets of starch covered in food-grade narcotics)

Watching this while eating doritos. Claire is so cynical and a know it all like Hermoine lol everyone seems to think these people are acting a character when they are just professional well rounded adults lol its obvious these vids are not scripted. i love that aspect about these shows

I admire how technically apt Claire is during her reverse engineering of the challenges. Periodically empathizing with her during the frustrations shes faced with, especially when experimenting with the cereal portion of making Lucky Charms. (Pats her on the back)

sigh man I wish this had focused on cool ranch as the flavor. I understand that generally the cheese flavor is the most popular. Super subjective, but cool ranch has always felt more unique and harder to recreate to me personally.

Me watching this while eating Indonesian Nacho Cheese Doritos, Huh, the ingredients ARE different. Where the heck is my romano cheese? All we got here is a measly, vague, 'Nacho Cheese Seasoning'. Dammit.

I didn't know there were so many flavors I actually want to go to the states only to taste them all. Where I live we only have sweet chili pepper, natural, nacho cheese, paprika, BBQ and hot chilli: /

What character dies Claire relate the most to? Hot Pie, clearly. Hot Pie is a baker and rightful ruler of the Seven Kingdoms, and Claire is a baker and the rightful ruler of the BA test kitchen.

this is amazing, but honestly, i don't understand how you somehow missed the Taco flavor Dorito, which was their first flavor (and still their best one. Nacho Cheese is just an acceptable second.
