Brad, can you comment on fermenting tangerines in a jar? They are very sweet & soft, and I am afraid I will end up with fishy wine mush - very alcohol-y or vinegar-y, but not properly fermented as shown in your video. Thanks in advance.

In biology when we learned about fermentation all they mentioned was alcohol, cheese and yogurt making as an example. It's nice to see just how many foods can be made through the process

Brad, you can just move the decimal over two places and multiply by 2 to get 2%. To get 20% (like when you want to tip someone, move the decimal over one place and multiply by 2.

Meyer lemons are too sweet. It's like they're halfheartedly trying to be oranges. A lemon should be proudly and exclusively a lemon. That's why Eureka lemons are better.

Yup squid are cephalopods, it's Greek for head-foot. They're related to octopuses, cuttlefish and nautiluses. They have more in common with slugs and snails than fish.

I wanted to plate it up nice because I care about you Such a wholesome moment. More people need to be open with how they feel like that, emile was so happy after that =D

Alton Brown made this in his shakshuka episode of Good Eats and he said it starts getting really good after a month, and even better after two months in the fridge.
