Really fascinating to see what goes on behind the scenes in a restaurant of this caliber. It's great they're carrying on the legacy of Jamal. Their food looks fantastic, and it's clever to orient seafood to a steakhouse environment. Everyone there looks highly committed to the highest standards, as should be. Wishing everyone there all the best and continued success.

What a well put together kitchen. The efficiency and cleanliness of everything makes me want to schedule a reservation for my trip up to NYC in March.
Kudos to everyone involved, especially to Chef Garcia. That guy can juggle task with the best of them, he’s a cool and swaggy looking dude.

Common misconception, but hiramasa or hamachi is not a yellowtail tuna. In fact, it is not a tuna at all. It’s part of the jack family, and they are probably some of the best fish to eat (and catch) in the ocean! The chef is hooking up whoever is getting those collars.

On my culinary school before, were prohibited to have anything on our hands/arms (rings, watches, bracelets, etc) during prep as it may cause contamination.
everything on this video is wonderful, but can't help but think about the items on Danny's hands.

The high level of organization everyone in that kitchen has is incredible! That clip at the end with Danny a year earlier was endearing, and he's really stepped his game up!

Idk how I feel about having bead bracelets and rings on with no gloves touching food, especially when you're talking raw fish cross contamination potentially

There are some seafood that have similar characteristics of Meat, especially Swordfish, Halibut, & Tuna.

The computer instead of tickets would throw me off. Somethings are more convenient on paper ie a shopping list for groceries.
