These are the volume measurements: 1/4 cup of honey/molasses/agave3 cups of all purpose flour (don't pack, spoon into measuring cup)3/4 cup of brown sugar, lightly packed 1 stick of butter1 tspn baking powder1 tspn cinnamon2 heaping tspn gingerPinch of salt1 large egg I also added: 1/2 tspn cloves1/2 tspn nutmeg Side note: If you've added all the ingredients and your dough is still a bit too sticky, as in a lot of it is still stuck to the sides of the bowl, I suggest adding a little more flour. It's perfect if the sides of the bowl are mostly clean and you can press down on the dough with your hand without it sticking.

Hi Gemma I made mini gingerbread houses using your recipe and template today and it was delicious. However I noticed that in the video you say to use 2 rounded teaspoons of ginger but in the description box, it says 1 rounded teaspoon of ginger. I decided to use 2 teaspoons of ginger. Anyways, this gingerbread recipe was really good but I just wanted to point out the mistake so other people know.

A little late to the party but we had a family activity night on New Years Eve and my 3. 5year old son had an absolute blast Thanks for the template and the cookies were DELICIOUS (We actually made them with 100% whole barley flour, due to wheat allergy, and they came out absolutely amazing and perfect)

Thank you cupcake jemma You have helped inspire my six year old to run her own bakery one day, every week she and I look forward to your videos. She would like to know if you went to baking school or if you learnt from experimenting at home?

Hi Jemma I went to your shop in Soho and I loved it. I bought a raspberry and white chocolate cupcake. it tasted so good By the way I wanted to ask if I wanted too buy a unicorn merengue cake would you be able too do it?

I have two family members allergic to any sort of ginger. Could I just leave out the spices and add vanilla to make the cookie dough? Also if I use castor sugar would it alter the texture of the cookie?

You could do all the sides and ends, let them dry, then do all the roof pieces. You could also put names on the mini houses and use them at a dinner party or family Christmas dinner as the name plates.
