Mine turned out light brown, super-light and fluffy and delicious. only I wasn't going for super-light and fluffy with carrot cake. Maybe it was because I used self rising flour instead of all purpose flour + leavening agents in the proportion your recipe states. It was a hit anyway, and delicious, but very odd for -scratch- cake, as it was light and bouncy as a pre-mix boxed chocolate cake.

excellent. you know, I really want to try this once we get into maple sugar season locally and get maple butter to sub with the butter you used in the icing. Oh that icing was like 1. 3cm from the edge; )

I don't mind the taste of carrot cake, it's quite good. I just hate biting into those bits of carrot; I hate the texture. Can you recommend anything?

Hmm, could be the flour substitute. It is a fairly light cake recipe, though. Glad you liked it, even if it wasn't exactly what you were aiming for.
