It s interesting that they don t seem to do a lot of knife work and when the butcher guy did use a knife to break down the beef, the knife he chose to use was a honesuki, which is a Japanese poultry butchery knife.

Im not being a hater, but trying to get the most browning on the meat and then seeing it look like steamed meatloaf didnt make that much sense to me. Cool dude though.
