Popoca serves some of the best Salvadoran-inspired pupusas and tamales in the Bay Area. The name Popoca, meaning to emit smoke, reflects chef Anthony Salguero's signature style of cooking over a wood fire. He grinds all the masa in-house to get the ideal texture needed in traditional Salvadoran cuisine. For the pupusas, he makes a Oaxaca and Monterey Jack blend to achieve the perfect cheese pull, and then stuffs them with fillings like braised beef tongue and mushroom. Yeah first of all, idk what this is, these aren’t pupusas at all. Born and raised in El Salvador myself - came here as an adult - you can tell he’s americanizing everything, he cannot even say his heritage correctly. Salvadorian this is how every non-native says it, and it’s frankly insulting (I’m not offended, it’s insulting to intelligence) even if you type it on your phone, Salvadoran. That’s like saying he’s Americanian, but cooking hotdogs and hamburgers with potato salad with raisins in it and olive oil. That’s the American equivalent of what’s happening here

One of my favorite memories of El Salvador is watching the women slap the pupusas back and forth and then dropping them on the griddle. The anticipation of biting into the hot cheese filled pupusa with the cool, vinegary cabbage salad on top was everything! What a great video. Thank you!

Totally support food shops like this especially when ppl are creative with their food and hard working it pays off especially when your product is good, good work ethics, personable, integrity. I totally understand this guy’s passion for his food

El Salvador is seriously into pollo campero. I flew down a couple years ago and when I flew back I swear half the passengers were eating pollo campero on the plane. It smelled like a kfc!

When he said if he had more pupusa on the menu thats all people would get, I was like yeah okay buddy relax I bet they're good, but so is other food then he made them and I was like yeah he right

Hes open to trying new things. Over my area they sell birria pupusas. It doesnt mean is bad just new ideas. But never forget the traditional way of pupusas

Popoca is one of the best restaurants in the U. S. I travel and eat a lot because it's part of a family member's profession.
