Im a Filipino and I understand whats he doing and the fusion dishes that he is introducing coz I know the origin or part of the dish. but the the big But is. if your not familiar with fil cusine. would you understand what kind of dish is that. everybody knows whats a burger is but not all know whats longanisa. Start with the basics for the unfamiliars. dont confuse. fil cuisine is coming up mainstream. were not up there yet. to do fusion. fusion in the philippines? Yes. its way too early for those not familiar with filipino cusine. introduce them to classics and they will understand those fusion dishes

Come to think of it, it's kinda hard to replicate the Pinoy food we love since our childhood when you live in other countries, where the indigent local ingredients is almost impossible to obtain in its fresh state as possible, especially mangoes, tamarind or kamias ( used to make sinigang, kangkong, fresh bagoong etc. Reason why chefs with Filipino roots have to improvise and work with what they got. But I salute them, for representing Filipino food, the most underrated cuisine compared to its Asian brothers, and giving it the spotlight it deserves, finally.

I'm extremely wary of Filipino fusion. I've been to a few restaurants and honestly the fusion just seems like an excuse to charge more than usual. What's usually disappointing is that the chefs cash in on ethnicity and go off in their own directions without respect for the essential flavors and techniques of our traditions. Fusion is often used as a cover for not knowing how it's made in the first place. Non-filipinos end up walking away satisfied thinking they know what our food tastes and looks like.

Filipinos are really the worst food critics about their own food. That is why Filipino food in the US can't keep up with Thai food, Vietnamese, Chinese, Indian because their people would support their own country's food as it is. Filipinos will only eat Americanized Filipino food and Filipinized international food. Filipinos do a lot of twists and fusion which only creates more confusion. Crab mentality really got the best of us Pinoys to the core without us realizing it.

Well maybe because they have a large Filipino population? My 43 year doctor is Filipino, and he says he has severe heart disease and hypertension because of his Filipino diet. and expects hell need bypass surgery in a few months if not sooner. so EAT UP and enjoy all that deep fried fat, salt, and cholesterol. Yummy!

I wanna to go back to Maam Sir! all the dish are so good and raise to a higher level! Its the best Filipino restaurant in Los angeles area. I just wish the place would be bigger. Btw. how come there's so much pictures of Philippine Basketball? Is the owner a former PBA player or connected to a certain team? Just curious.

Finally someone who understands the transformation of Filipino Food when crossing to the US. Its not filipino but heavily influenced thus making it its own take. I love the fact that he is very honest with what they are but very proud of the roots and giving his own unique spin to it. Hats off to you!

Born and raised Filipina here living in California. Filipinos criticizing your Lumpia has no idea that Filipino food is fusion food. Even the culture itself is fusion. My Uruguayan husband insists that Im Latina and not Asian even though I kinda look Chinese with round eyes. See! Even I look fusion.

It's good to have fusion restaurants and traditional restaurants. It's not necessarily better it's just different. Our traditional recipes withstood various colonial suppression which is very unique to us. Our food is rich in history so museums are equally important in my book or in this case tongue: )

LOVE IT. It always bothers me that the only Filipino restaurants to become popular in the Bay area are the fusion places, so it loses its identity. This is absolutely filipino cuisine, just modernized, shows filipino cuisine doesn't have to be in a fused with another cuisine to survive.
