I love when Americans go outside the country and fall in love with the food. Just realize that there is no FDA or any other safety blankets. So I hope the horse, cat and dog meat tastes good. Lol

A 'perfect taco' needs a fresh corn tortilla made on the spot, simply seasoned meat (carne asada, lengua or adobada) and cilantro/cebolla. Salsa is not authentic nor necessary.
