I don't know why people aren't covering the original nacho which was like a dozen chips with a thin layer of refried beans on each chip, then covered with cheddar and/or jack or white cheese and a meat of your choice, melted under a broiler and then a plate of guacamole, pico, sour cream and pickled jalapenos for a garnish. You don't have that jenga-like mess. I have no problem with the pile nacho, which can be great, but you get more toppings with a better, more egalitarian distribution with the Tex Mex style. You end up with a dozen pizza-like triangles and much less soggy chips and no fights because some jerk took all the cheese off the top.

Ehh. I dunno, it looks okay to me. I would just get a bigger plate though and lay them out flat and layer everything on top so you have a consistent amount of toppings on each chip. With his nachos it looks like you have to eat through a bunch of the jalapenos and pico first to get through to the beans and queso and carnitas. When I eat a nacho chip I want a nice mix of everything. I would probably use some slightly different ingredients too.

The thing that I don't like about this video is that you are calling that shit carnitas, I mean I'm sure it tastes great but man carnitas are cooked in pork fat, what's that shit about using stock, and anato seeds, anato seeds are used for cochinita pibil not carnitas. Please before doing something do some research and if you are not sure just call it something else, cause that ain't carnitas.

I love every single ingredient, but I don't understand why you would combine them. Especially the carnitas looked incredible, and that way of making mashed beans is actually very popular where I grew up it's fantastic with some caramelized onions and tomato sauce on top. edit: I see that mashed beans are actually called refried beans. TIL

Best = the more you slop everything together. NOT. Thinking this way means, the best hot dog is one with everything you can find in the kitchen on top. This more is better way of thinking has to stop, its foolish and counter productive. Why not have all that stuff on the side so you can dip and choose which one will complement the chip?

Nice tricks for carnitas and refried beans. Beautiful nachos but big mistake on the plate. Restos always do this; they mound the nachos on a plate that can barely hold them. Looks awesome right? Yup, but try not spilling food on the table. I always use an oversized platter when making party nachos at home.

What a lot of people look for is the mound of food indulgence of nachos, and this strategy is great for that! However, I think the best way to have good nachos is only one layer, and every chip gets everything. I only let myself eat nachos every once in a while, so layering each chip is worth it.

Of course that metal wire flew like crazy. He used sheet-metal snips which use shearing force instead of a compression force. Though, there is a type of shearing cutter for wire, it is quite different than the sheet snips used in this video. The point is use the right tool and always wear PPE.

You can do this Sure dude, I'll do it right after you get me a pressure cooker, whipped cream charger and an immersion blender. Regular people don't have that shit at home and sure as hell aren't safe to operate it all at 3 AM on Saturday when it's time for serious nachos.
