The Secrets of New York's Best Bagel Handmade

Utopia Bagels co-owner Scott Spellman has been making fresh, New York-style bagels for over 40 years. Here he takes us through his bagel-making process, and talks us through his philosophy on what makes an NYC bagel the one to beat. Don: As long as you have the best quality bagel, or anything you produce, then cost becomes moot! Produce the best quality, the best tasting bagel that can be produced and folks will pay whatever price you put on it! And that s a damn fact!
We may not like paying more but we will happily do it to satisfy that craving!

He is what Jocko Willink calls a Leader. I've never baked a thing in my life and he made passionate about baking bagels! He has the attitude, the charisma, he leads by example, awesome! I would be absolutely proud to work in a place like that, proud of their products. Everything about it is awesome!

I live around the corner from this bagel store. The bagels are very good but it's not worth the 45-60 minute wait on line to get bagels this store has every day. My time is more valuable then a bagel. Nothing not even a bagel is worth spending an hour for.

Kosher Delis and bagel shops take an almost Japanese mindset to their products. Pride, craft, repetition and absolute dedication to making one or two products as great as they possible can. Saluted this is the type of stuff that inspires me!

Sometimes I forget all that goes into making a bagel as I m spoiled having had them my whole life including homemade versions. Hand rolled is the only way ay to go. It s wonderful being a native New Yorker.

I live near this place, it is very overrated. The lines are long, the manager is rude and the service is very slow all for a very mediocre bagel. Do yourself a favor and go somewhere else.

Top notch owner. He tells people to making mistakes is the best way to improve. People need to feel safe to be their best selves. He gets it, and I certain his employees love him for it.

Man, I hate eating Lender's supermarket bagels. I miss NYC bagels and bialies so much. I might have to pull 50 out of my pocket for some Utopia Bagels to be shipped to me.

Lol, in the USA they think their accents are pretty crazy from state to state. In the UK you can cross into the next town and people sound completely different.
