At LaVaca BBQ in Port LaVaca, Texas, the Nevarez family draws from their Hispanic culture and Texas upbringing to make Big Red pork ribs, smoked pulled pork and brisket tamales, beef cheek barbacoa, steak fajitas on blue corn tortillas, and more. Rafa: Kelli has mad knowledge in her craft. Its clear that her father spent plenty of time passing his craft down to his daughter. She def learned valuable skill frm her mother no doubt. Much like my own mother, she knows just how much ingedient is needed and when its done.

Everyone plays the I have a secret ingredient or recipe game. Unless you are using the blood from a rare endangered spotted lemming its one of or a combination of the random 10-20 common spices available in the world, and the ratios of which are all roughly within a few percentages of eachother. There is absolutely nothing secret There never has been and there never will be with food. You have invented NOTHING. I guarantee if you spoke of or exposed your Secret, it wouldn t be anything unique or proprietary. Guaranteed. This secret thing is getting so old.
Food and food preparation is so unscientific. It tastes good or it tastes bad and theres a handful of a few very simple rules to follow to make it enjoyable.
Im distrustful of folks who think they are creating symphonies or works of art by making enjoyable foods to eat.

I loved the family element of this video. Seeing Kelly doing the hard work with the family and the respect she showed toward mom and dad was impressive. I was also impressed by the tomales and how they took something really good and made it better. I hope my travels take me there so I can get some real latino food.

FYI bbq just came full circle, bbq came from the same Spaniards who settled in mexico TeJas/Texas, hits the name bbq barbacoa, this was the food of the original cowboys baqueros!

Just so you all know that soda they heated up as you can see it was like a syrup when they poured it out so don't think that you could just go get the soda and put it on

Ever since forever I've thought Texas BBQ and tortillas/tacos/tamales was a match made in heaven. Finally! Too bad I'm halfway across the country from Texas - one day.

THIS is what I miss about TX, and the gulf. I thought they were saying something was BIG RED to hide an ingredient. they're actually USING BIG RED. awesome.

Tbh I've never heard of anyone trying to burn dirty on perpose. In my experience tht dark nasty smoak will cause the meat to taste grimey gasey and burnt
