Interesting recipe. Not sure if many cooks use cola as the base but you can find delicious Khao Kha Moo all over Bangkok; street carts and restos. And of course the _Cowboy Hat Lady_ in Chiang Mai is super famous for this dish. Every single person I know who has traveled to Chiang Mai has visited her.

if you guys love that trotter stuff from thailand that looks really good, you guys should really check out the filipino chinese dish called pata tim. you guys are gonna love that. it's in sort of that ballpark. it's actually quite similar minus the spicy kick to that thai version.

here in Philippines we have a similar dish like that. its called Pork Humba its like Pork Adobo, but we use Pork Troters or Whole leg and stewed until tender with vinegar, soy sauce, black pepper, garlic, onion, and pineapple juice or brown sugar to add sweetness.

Why not use regular Coke? Diet Coke contributes just as much sweetness, just from synthetics instead of corn syrup. Hell, you could just use Mexican Coca-Cola and skip the palm sugar.

they should really not use diet coke if they use it just because normal coke has sugar, diet coke just has chemical sweeteners that will LITERALLY do the same

i know asian cuisine is very popular, but you guys could try more of european cuisine, like german/austrian Stelze would have been perfect for this episode

Looks really good, those picked mustard greens will help balance the pork hocks richness. And glad to see the chef finally break into a smile midway.

Another excellent use of pork hock - but this and the soups you mention are not the only uses. Look into German and/or Bavarian crispy pork hock. YUM!
