yah everyone wants skirt steak they just love eating the part of a cow that is considered the toughest and least wanted peace of meat. I would say you are just a moron but you are in ny so its understandable after all not a single person their is normal or smart. skirt steak is nothing but trash trimmings that get turned into hamburger for the fact its useless fore anything elce pretty much. infact most people wear I live buy skirt steak since its the cheapist cut of meat they can afford do to being poor. do not get me wrong its a flavorfull meet and a lot of Mexicans buy it but they have to do a lot of work to get it tender witch most people will not do when you can just go buy a tender meat like a ribeye. witch is a nother cut I do not understand its jucy tasty and tender yet its cheap while a more tougher cut like a porterhouse is 2 times the price. well I am not going to buy a porter house for 10 a lb when I can get a ribeye for 5 a lb. witch is also funny how ribeye is 5 a lb yet hamburger is 4 makes no cense the only thing I can think of is buy me people want tender with out the fat people eat extreamly health buy me not like the people in ny. but then again they can their since they run around all day like a quicken with their head cut off witch couses them to stey skinnes.

I worked for a butcher when I was a kid he had a pork store he did all these things the man did it all without the science and the product was incredible yes it was very labor-intensive however everything was always sold out. the problem was this old guy wouldnt share his knowledge with people he didnt allow any one person to know everything so when he died it all went with him and that is such a waste a life to steal knowledge that others freely and lovingly bestowed onto him he would not pass the wisdom, now thats just wrong especially when he didnt have the store anymore. So to Allow this information to slip away from the earth is just so petty and wrong. So lets be happy this guy who none of us can actually get product from the store has figured it all out I guess Ill be eating boars head

Anyone that eat swine all have the same things in common, they lack intellect and spirituality, because intellect tells you that swine is not for human consumption and UNHEALTHY to consume because it leads to sickness and discomfort, they lack spirituality because its written in the scriptures In Leviticus 11: 27, God forbids Moses and his followers to eat swine because it parts the hoof but does not chew the cud. Furthermore, the prohibition goes, Of their flesh you shall not eat, and their carcasses you shall not touch; they are unclean to you. That message is later reinforced in Deuteronomy.

As an italian, it's awesome to see a foreigner have so much passion about the craft. When he talks about the prosciutto scenario he is starting, you can see the frustration of wanting to do well and also let everyone understand the massive investment of time and money there's behind. I love the dude and i just want to tell him: I feel ya bro, keep doing good.

I feel like these kinds of shops should do what candy shops do when making their product. At least the ones I know have a showing of the product being made and while it's being made the person is responding to questions and explaining reasons for everything. I feel like people would be more involved and interested in it

God, that looks so good! I love salami! I promised my girlfriend that i would become vegetarian, eventually, but I don't know if i can do it! I love meat too much. If anything, i will at least stop eating meet two or three days a week. That's the least she will accept! But I love meat too much!

It is more than just a discussion, it is the craft that goes into the product. It is the cutting the gnarly stuff out, and care to make sure the quality is the best. That is what you are paying for. Attention to detail with quality product goes a long way, and it costs more.

Love charcuterie work. Unfortunately I positioned myself in industry more cooking side than the garde manger side. You feed me lunch daily I'll work for free. The experience would be a one of experience. Love this video. Thanks for the hunger pains. lol

Salami is very gross. That's why I don't like meat. You know, some people cry or laugh at certain videos, but this has almost got me vomiting after accidentally clicking on it. By the way, pork is not healthy, and I only eat fish and beef.
