Chefs at Yanagiya have followed the tradition of irori ever since the restaurants opening shortly after World War II. Irori was the meal gathering place, the cooking place, says Yamada of the traditional heated sunken earth. It used to be normal in Japanese homes, but now with modern civilization and convenient times, theyre gone. The invitation-only restaurant serves fresh meat and fish supplied by local hunters and fishermen on the same day. Sometimes we even go fish ourselves, Yamada adds. Agreed, Id rather miss out on the experience. As hard as that is to say and admit, than have a direct affect on the surrounding environment by simply exhibiting consumeristic tendencies. Just because you have the means to partake in said experience doesnt mean that you deserve to enjoy it. I know its harsh but everything in life is a balance and Chef Masashi Yamada has found it, and he sees a duty in maintaining said balance. Nature doesnt owe us anything but when you can strike a balance and make it symbiotic, it works and mustnt be altered. Amazing dishes, that left me salivating with both my eyes and my mouth, thank you for sharing this amazing experience.

Man, i know the video is good and all. But if you live in NA, you can literally do this every year with the hunting season. I have nagging feeling that the people that are amazed by this are people that lives in the city and never killed their own meat with their hands, i. e. the snowflakes.

Is duck supposed to have a very strong smell and aftertaste? Everytime I have had it at chinese restaurants it usually smells that way EXCEPT for the one time I went to a more fancy restaurant and had duck, it had almost no smell and tasted amazing! No yucky gamy aftertaste either.

I loved everything a bout Japanese so bad I am a chef myself, wanted to explore the secrets of living and eating a very healthy foods. Good hey just couldnt give us visa! I felt really bad for myself as Cambodian. If I ever have chance?

Why there is a tendency in society to eat undercooked meat, raw meat, raw fish? Why normal vegetables started to be called organic? Whats next, eating all raw, like animals? And why people find eating RAW meat delicious?

If i ever get chance to live in japan. I wont live in big city like tokyo. Countryside japan is my dream. I want to live as simple locals. Have simple life and eat from our own labor. That will be great life ive ever dream.

Too bad China purged alot of its characteristics and culture just to make 1 party stay in power for 7 decades. While in Japan people go head over heels to preserve culture and nature. Such an amazing stark difference

Japanese cuisine always makes French cuisine look amateur. I'm somewhat touched by this video. This is always like an art, not food. Well, traditional Japanese cuisine is an edible art for some.
