Added: To my bucket list. Look forward to checking it off the list. I will eat there one day if possible. I trust chefs to just make me what they want. but they often become anxious when I ask. I don't eat out much so if it's not my favorite I can afford another order. I personally accept the element of risk.

This guy is impressive in how he had adapted to american lingo, he spoke in a way that if you took away his accent, it would sound like any other american and that is super impressive despite him spending his entire childhood in japan.

I respect everyone on this series as to be a sushi master takes years of intense training and dedication to the craft. But this gentleman might be the most fun and humble of the series, I just want to hug him and say teach me sensei

The fact that he says that is grandmaster and master are almost retiring and his time is coming, but he must be almost 50y old, makes me think the level of mastery this gentlemans must have.

These types of specials are my favorite. As a retired chef, my favorite orders to make is when the customer basically says, surprise me! Or I'm trusting you, make me something delicious.
