Alex, also known as French Guy Cooking, ( Spasmodic: 3: 06 is such a genuine moment. That's what it's like working in a pizzeria. I work in a little family owned Italian restaurant, and every once in a while I'll look at the old man and say, Any time you want a lesson in how to make pizza, let me know. This is a 74 year old man who's been making pizzas and working his entire life, what the hell am I going to teach him? Ohhh I get hit with the classic vaffanculo and all sorts of things, and we all have a laugh and a good time. Awesome video, you guys! It made me smile.

Nice seeing the process. but now I'm craving some pan or deap dish pizza real bad. That is the bad side of working graveyard shift, off work before any good pizza places (or any good food restaurant for that matter) area open, and lose a decent amount of sleep (falling asleep on the shift is ground for immediate termination if they wish) if I went out to eat pizza, and I'm awake & off to work well after all the good places close.

The pizza at Prince Street is not as good as they indicate. It has the texture of wonder bread and overall, it's flavorless. The sauce has no tang and the cheese is not the best. I also think there is sugar in the dough. They have room for improvement. When you are drunk it's good enough and that is about all I can say. There is much better pizza out there.

Alex, I love that you have been able to come all this way! I have loved your videos for years! Even having gone through culinary school, you still teach me new tips and tricks with every video. The way you combine cooking and science is extremely admirable! I cant wait to see more from you!

An old saying comes to mind with respect to Alex's choice of cheese and pepperoni: hours in the library can save months in the lab. A little Q and A before you went to prove your worth could have directed you to arguably the best places to get Italian cheese and meat in America.

This the exact same style that a place makes right up the road from me and I love it the pepperonis curl up and everything my god is it good. The owner just recently passed away such a friendly guy he was a italian immigrant and man i hope the recipe doesnt change

1: 58 WRONG! CAST IRON IS FORM OF METAL, maybe he meant to say regular steel sheet pan, they tend to deform under extreme heat, like in pizza oven, but you can't melt it inside, melting point of steel is way higher. Know your metals!

Somehow I don't believe AT ALL that that guy had anything traditional to his pizzas. Or that his pizza was any pizzayyy at all. Thanks to Alex you didn't see any disrespect to the guy. But I wouldn't count my pizzas to him.

pepperoni shrinks in the oven, so if you put on what seems like an appropriate amount when it comes out you will be disappointed, you have to go crazy with the pepperoni to make it come out with a good amount

Come on Alex! I know you have 6 hours, but damn, do not trust others with your ingredients! :P Especially italian ingredients! :)This was great, love Dom. Will definitely try his pizza if I go back to NY.
