Every time I have seen a Japanese cuisine - based episode, I feel like the dishes are all about discipline and precision. It's an educational experience for me. They are showing off their culinary skills but the one major take - away from this is how much discipline I lack in life. I am an Engineer who likes watching food videos because I believe Engineering and Cooking have a lot more in common than one would think. The way the dishes are tended too, it's like the motive behind it is to feed your soul.

My mom was raised in Japan in Tachekawa, right after Hiroshima. Am a huge fan of Hiroyuki Terada, Diaries of a Master Sushi Chef, Guinness Book of World Records holder for cutting the most number of vege slices blindfolded. Gordon Ramsay was there to witness it. Fantastic man, Hiro-San. When you address a person and add the -san behind their name, it is loosely translated to: dear honoured, respected, my friend. Love the vid. How much does it cost for the entire meal (USD) per person?

This is one of those situations where someone might see a picture of a single course from this menu and complain about small portions at nicer restaurants not realizing that you get course after course after course. If the meals were normal size this would not be a Kaiseki menu but an eating challenge lmao.

I don't know why. But as an Asian person, I look at these dishes and just think, I would still rather have a slice of pizza. Texture of seafood grosses me out. I bring shame upon my family. Edit: texture of raw seafood

Suimono dashi with mushroomS. and theres only one piece. because math and grammar is irrelevant in explaining the highest form of japanese food
