I wonder why he can't get the straw/hay for smoking the katsuo? Is it a regional type unavailable outside Japan? Or are the local American straw/hay types too arbitrary in their mixes (alfalfa+bermuda grass+clover+etc? He should maybe attempt some home/garden grown varieties. He could theoretically grow enough on a small plot for his yearly restaurant needs with some Japaneses regional veggies thrown in for good measure/value added. Hmm

One thing I've noticed from Youtube -- there are a bazillion 'Master' Sushi Chef. Makes you wonder why there aren't that many master chef of other cuisines. Also, why should people be impressed by him using a rare fish? It's not even like he's the one that went out of his way to catch it, lol.

We ate an amazing meal at his place in SF just before before the shelter in place started. Only one other couple with us in the whole restaurant. Cool experience as we were able to chat with the chef throughout the dinner. If you're looking to do a blowout sushi dinner, this is the place!

you should slow down the scene a bit for the caption. It went too fast for keeping on reading the caption. I know and understand that you want the scene to be more excited when watching this. There are many episodes that the caption is too fast to read. please fix it

5: 10 I'm always surprised that quality chefs just put their acidic ingredients in these plastic containers instead of glass. I bet the sake even came in a glass container and he put it in this plastic.
