I love homemade bread; )-Here in Sicily (mostly because there's an abundance of -hard grains-) instead of -00- we generally prefer to prepare bread (and pizza, indeed) using a very specific flour, which is the -Semola rimacinata di grano duro- (remilled semolina of durum wheat. It is a different batter, and it will give a different bread/pizza, indeed. But it's a quite particular consistency, and quite a particular taste, you know. -And we (Italians) are also pretty good at using sourdough, indeed -_-

emma, could you help? i tried using whole wheat and milk just to see what would happen and my crust turned really really hard as a rock. was the oven at 240 c too hot for it? (the inside was ok though. it didnt have a lot of bubbles and was a really tight crumb, but i think thats cause i skipped the overnight time since we didnt have room in our fridge)

i dont have a dutch oven. here's an alternative i used that worked. --use 2 baking dishes that have the same area and shape (that have a bigger rim/handle on the sides)-put your dough into 1 of them. -put the other baking dish upside down right on top of the other one. it will act as a lid. --also if u dont have 00flour the best option is strong flour.

Really sorry that this video is not higher in the search results, because you made possibly the best recipe for bread making. Followed your recipe almost 100% with 00 flour and let the bread rise for 14-15 hours and it was really amazing without a dutch over, with a tray with water on the bottom of the oven. Thank you.

Emma, you're the best! That looks so amazingly delicious! I just baked some bread earlier for dinner using an overnight refrigerator ferment and about the same hydration. but I didn't bake in a dutch oven. I used 10% whole rye flour in it, yum! I would love to see more bread recipe videos! :D

That is some spectacular looking bread, Emma! I could just go for some of that with some good olive oil and salt to dip it in! Think I'm gonna have to give this recipe a go this weekend! I will try to remember to, -Not put too much pressure on it and be very gentle. -; )

Hello. Your bread looks fantastic. I have a question. After you take the bread out of refrigerator, do you let it warm till it reaches room temperature? Or do you immediately put it in the oven? Doesn't refrigeration ( aprox. 5 Celsius) stop the fermentation?

Hey Emma! I want to make this bread for my Italian family coming in for USA Thanksgiving. How can I do this is a regular oven without a dutch oven? Also I have no access to that yeast. I only can dry active yeast where I'm at for now. Can you give me some advise?

That made me so hungry! Sandwiches with that must be heavenly. -So any flour I want. Oreo flour? I doubt you have ever dried it, but would it work or would the crushed up Oreo mixed with the yeast not work too well? I'm thinking alcohol without the liquid.
