I own a Fry shop in Belgium.
The level 3 chef got most of it right, including the history.
My experience tells me that a fry should be cooked twice in palm fat or animal fat.
Mayo is the way to go, Belgian mayo tastes different.
We have Frietsaus as well which comes down as a way more rich-in-flavor version of Mayo.

Ketchup acidity goes with the fat of the fries oil, while mayo is oily sauce on oily potatoes.
Fried: Skin off // Oil brushed in the oven: Skin on
If the frozen fries are not made from heavily processed potatoes, let the fries defrost in a colander (avoid excess water, then fry them (avoid cooling the oil too much.

If you are in The Netherlands or Belgium, you have to go with Mayo. Believe me it tastes way different than the garbage they produce outside of those two countries and it is delicious with fries!

French fries are called that because people are racist lol. They where created in Belgium but the British didnt care to tell the difference and basically said well theyre all French.

A way to get away with baking frozen fries is if you line the pan with aluminum foil. It helps them crisp up properly while using a lower maintenance form of cooking.

wait, is it not normal to eat fries with ranch? '-', where I live, I've never even heard of eating fries with mayo, but a lot of people do like dipping fries in ranch
