Hi Chef John. Great video, will make this for sure. I was wondering if there are any ways this recipe could be made with the same simplicity for someone who is gluten intolerant. As my partner is gluten intolerant and i noticed you made a point of saying that a lot of gluten developed during the 18 hour rise, which i imagine is likely a pretty key step to this bake. Are there any alternatives that could be used to get a similar effect with out the gluten? or is this recipe one of those that pretty much requires it no matter what? Thanks again for the video

Thanks for this, but there is no yeast or flour or bread, for that matter, to be found in my town. What bread-like substance can I make with self-rising flour and no yeast? I have salt, baking soda and powder, and (wait for it) olive oil and red wine vinegar. If I only had some romaine. Any suggestions for those of us without even 1/4 tsp. yeast? Would you develop a recipe, and perhaps call it Pandemic Bread? Okay, so I joke about the last part, but any ideas on what I could make with my limited supplies would be greatly appreciated.

this is oddly really similar to how you make a sourdough starter so i will actually be giving this one a try though i am surprised to hear that there is a shortage of yeast though i guess it would be accurate to say that there is a brake in the supply chain as we have lots of all this stuff but as we dont normally have people panic buying this much we dont have them in the shops.

The older I get, the more some lingering cooking smells in the house bother me, especially savory foods. It smells like the hallway in a Brooklyn apartment building. But bread. the lingering smell is always cozy and happy. I've read a realtor article that says if you want to sell a house, one suggestion is to bake bread or chocolate brownies.

If you take a small scoop of this dough BEFORE you turn it out on day 2 and mix that little bit of dough into another batch of flour and water (and maybe a tsp of sugar just to help the yeast along, you can make that little 1/4 tsp of yeast last until you finally get to start going out again. or until you run out of flour.

I've been able to find toilet paper in bulk multiple places. But have not been able to find bags of flour. I don't think people have forgotten about bread making. it's unlikely that you will read this, but if you do, have you thought about teaching people how to make a sourdough? Especially with the yeast shortage.

Chef John is getting funnier by the year and he's a remarkable person. It's just preference but I do zero kneading and after 18 hours I fold the dough into a cornbread dusted pre-heated 450 degreed Dutch oven - 30-45 minutes later it's ready. I have a large glass bowl with a fitted lid and it's an easy process.

Should be titled, No Need to Knead Bread. Similar to your expression if you want it today start yesterday. Question, when is the best time to plant a tree? Answer: 30 years ago. When I make no knead bread I use a very big plastic box, so I can close it with a lid and not waste foil or plastic. The dough is so fluid it doesn't even mater that the box has corner, it all comes out easy. It's also easy to refrigerate the box if needed. I'll attach a picture on twitter.

I love no knead bread In the past I've gotten more of a Boule by doing the second rise in a covered bowl lined with parchment, then plopping that into a preheated cast iron dutch oven. Those are awesome pots for baking bread but I assume this recipe intentionally avoids using it since not everyone has one.
