Gazpacho Pasta Salad - Food Wishes

This fresh, vibrant, and deliciously different gazpacho pasta salad is based on everybody's favorite cold summer soup. Not only is this simple to make, but you can easily adapt this to your personal tastes. This would be a perfect side for any grilled or barbequed meats.

My gazpacho with the same ingredients PLUS RED BELL PEPPER and extra raw garlic, more fresh basil, some red onion, less oil but with a little lemon juice added, combined in a food processor instead of a blender comes out much nicer, prettier and most importantly tastier with a better mouth feel than using your method with all it's processing and straining. It might be better and a lot more healthful to just make Gazpacho soup with veggies and add cooked pasta into the soup as a garnish along with cut up avocado at the end and mix it in.

This type of recipe is one of the few instances where I think that cooking pasta to the usual al dente, or slightly firmer, doneness makes sense. That includes spaghetti with tomato sauce if the two ingredients are allowed to meld overnight (i. e, at least 12 hours. If eaten immediately after being combined the pasta should be cooked more than recommended on the packaging, IMHO. Far too often following the al dente advice results in pasta that is too chewy if eaten immediately after being cooked.

I know it's not traditional, but I always put garbanzos in my gazpacho. I think they'd work well here too.
We had a terrible spring here in the Pacific Northwest. and now an equally bad August. So my tomatoes are late this year.
But gazpacho is first on the list.
This salad will be second. with garbanzos.

As always it’s the quality of the ingredients that make the dish. Imagine this with tasteless supermarket tomatoes and cucumber and peppers that have never seen the sun. Difference between light and day from this delicious dish.

I had just thought of this yesterday! Why isn't there a pasta salad with tomato sauce! Gazpacho/tomato sauce, I don't care what you call it as long as I can have some! Make'n it tomorrow! Thanks Chef John! Saluti!

Everybody tells me not to mix fresh cucumbers with tomatoes, because I'll loose all the C vitamin. I DON'T CARE, this is one of the best tasting combos in the world. Thanks for another great dinner idea.

I'm making this! I have so many tomatoes, cucumbers, and peppers from my garden and didn't want to waste anything so I was looking for new recipes. You read my mind Chef John. Thanks a million!

CJ the OG with the meaty paws, you know I cant throw down cucumbers because they make me burp, I do LOVE pasta salad though = maybe No its not worth it - but it looks good

I am going to make this. But I think I will add some cherry tomato's in at the end with the diced onion and cucumbers. Can't ever get enough tomatoes into gazpacho.

Top each serving w/ small, herbed croutons! We always had this as a topping for individual bowls of our soup for added texture and flavour.

I think this is the first pasta salad recipe where the recipe didn't call for running the pasta under cold water after draining.

You could serve this as salmoreja - the Moorish, older version of gazpacho - and adding diced ham and wedges of hard boiled eggs.

When pasta in pasta salad is undercooked it is not the texture that I dislike. What I dislike about that is the raw flour taste.
