Tiger Bread (Dutch Crunch Rolls)

These soft-on-the-inside, crunchy-on-the-outside buns make any sandwich better, which is why I was shocked and amazed to learn that these beauties are virtually unknown outside San Francisco. So, if you want your next turkey and Swiss on a Dutch Crunch Roll, you ll have to make them yourselves, which is both fun and easy. Alisa: is the top crunchy thing traditionally supposed to be sweet? i always bought tiger bread from supermarkets in the uk and it's always just a crackly crust (doesn't feel like it's a separate topping) and always salty - almost like they brushed it with a salty egg wash before baking.

As an SF resident and sandwich enthusiast, I think Dutch crunch is very overrated. It s not bad by any means, but we re better known for sourdough which AI considerably better. Honestly, I don t think it s any better than regular white bread other than appearance. I ve never had it actually be crunchy. And I think that s why chef John didn t run a fork over it. The only time it s worth getting is if the sourdough isn t soft enough. I know one pretty famous place like that out here. It s the same reason a baguette is awe full for sandwiches. I love baguette, but you need to be able to easily bite a sandwich. It shouldn t be chewy or sharp, which is the sign of a good baguette.
Also for those that don t know, SF has one of the best sandwich scenes around. I ve traveled a lot and I d say it s better than NY, NJ, PA, IL, etc.

In the San Francisco area, I dint even bother going to sandwich shops that don't have Dutch Crunch, and then to get to a place that toasts their sandwiches with Dutch crunch, I will drive past two that don't toast their sandwiches.

Tiger bread is sold in loaves in Australia. They also make the bread a lot denser than other loaves, so I use it to make the perfect French toast: custardy and thick as if it was soaked for ages, but still maintaining form

These look delicious! I wonder if corn starch would work instead of the rice flour. I don't usually have rice flour on hand, and corn starch doesn't contain gluten either, or so I've heard. I think I'll try it.

Tijgerbrood! My favorite growing up, and i was struggling making them. Your take looks less like what we have in the Netherlands, but it does look more tiger. I will definitely give this recipe a try!

These are very popular at this one bakery I shop at but they need to look more corn flake like on the top. Use milk in your topping and make a little wetter so as the moisture evaporates it cracks.

Chef John, I've been slowly asking you to make this for years. I used to live in the Bay Area and only get to have this every other year when I m back. Thank you! Thank you! Your forever fan, G

well, being Dutch, I'm happy I can just buy this at the supermarket around the corner. And yes, it's probably the best bread you can get for a sandwich (including grilled cheese sandwiches.

I grew up in San Francisco, but moved to Virginia. I haven't been able to find Dutch Crunch rolls here. I love to use them as burger buns for big juicy burgers. Now I can make some! Ty!
