You can break the stem off of the pumpkin and cut through the center. Yokohama, Long Island Cheese, and Jarrahdale pumpkins are also delicious. Save some of those seedds for your garden next year. Pumpkins are fun to watch ramble through the yard and y'all don't have all the pests that destroy squash plants out there.

I was so hoping for a recipe like this soon! I made a pumpkin curry style soup as a blended soup, then added shredded chicken. And the very next thought after tasting was how would chef John do this! Thank you!

Kabocha soup is the best as a creamy soup. Not sure i want to eat it in chunks. Although I love most of your recipes CJ as I use them all the time.

Every grocery store carries this now. in regards to red curry paste. Bahloney. i live in Ct. not exactly the boondocks. Very hard to find, even in thai markets. I dont get it.

if the size of your pumpkin allows it, pop it in the microwave for a couple of minutes -- it will soften up and cutting or peeling it will be significantly easier.

In Germany, it's fairly difficult to find any variations of pumpkin other than hokkaido and butternut squash. Would those be what chef called regular pumpkin?
