I am in need of low carb versions of foods and this looks really good except for the tortillas. I you have time someday I would like to see you do a version of homemade low carb tortillas. I have tried some of the ones in my supermarket, but they are not very large and I would like to make my own. Please say yes. Diabetics around the world would thank you.

I just had these in LA last week when I was visiting. they were probably the best tacos I have ever ate. Thanks you, I now can have these whenever I want. even while in a blizzard in middle of the winter.

Hi. This isn t birria. What makes birria is that it s made with lamb and it has the unique flavor because it is lamb. Sad to say but this is more closely resembles picadillo.

Mexican here John, nice take on the recipe, just wanted to clarify that we do drink the consomme, there's no reason not to do it, it's delicious that's all.

Great recipe Chef John and totally accurate. I know, I'm Mexican. Just called it quesabirria, it's easier and shorter. Quesadilla + Birria = Quesabirria.
