This simple, comforting potato casserole was one of my favorite foods growing up, and it would have been a favorite of mine as an adult, if I hadn t gone to culinary school. Happily, I ve rediscovered how great this significantly less rich milk-based version is, and I m very excited to be sharing it with you. bandiceet: I used to think my mothers cooking (particularly a few certain recipes, such as pumpkin soup, and a few key others) was the best, and could be put up against some professional chefs.
Then I became older and learnt how to cook (and a certain Blogging Chef was introduced into my life, and then went tried some of my mothers cooking again after a few years. Apart of me wants to tell her to get out of the kitchen since I can do better, but I don't want to break her heart.
I love her but yeah.

This brought back memories of my own mum's scalloped potatoes. Like your mum, she just used milk, dusted each layer with flour, and my mum also dotted each layer with butter. She never put cheese in hers, so in my searches for scalloped potatoes, I was wondering why people kept putting cheese in it. We all adored it. The first Chef John video I watched years ago was your steak Pauline, in memory of your mum. I'm so glad you posted this new memory of her.

This recipe reminds me of the first recipe my mom taught me, which was an Enchilada Casserole: Sonoran Style. Instead of individually rolled enchiladas, she layered tortilla, enchilada sauce, and cheese up to the rim of a circular casserole dish and baked it that way. That with refried beans was a family favorite. Of course, younger me doesn't include the salad in that classification. xD

My mom's recipe. exactly the same except different. ;) add a few pats of butter on top of each layer with very sparse extremely thinly sliced onion rings and a very light dusting of flower. Once in a while would have well peppered pork chops cooked on top. Ps don't trim the fat off the chops if you put them on top. the pork fat dripping into the taters adds tons of flavor.

My mom added a bit of flour (or seasoned flower) to help the gooey factor after a trip to the oven as a emulsifier with the added regular or even skim milk. This would basically make a thin - medium white sauce A dash of nutmeg freshly grated at top works well too! :D Yours looks amazing! Thanks for sharing your love for potatoes!

We would visit my family at Cayuga Lake at least once a year. My son would ask my mom to make old rotted potatoes (he did not know what au gratin was. This would cause my Canuck grandfather to break into great guffaws. Have you ever had new potatoes & peas? Another great NY family fav. Thanks for the flavor flashback!

I've made only a few what my wife and I call Prison Riot Foods. About 13 years ago I attempted a Ham and Potato Gratin. it cooked for 90 minutes, the potatoes never cooked and the milk just soured. We both took one bite, spit it out. it was so bad, even our Beagle Buckley sniffed it and walked away. LOLOLOLOLOL

I'm also from upstate NY and this is very similar to MY mom's scalloped potato recipe, although she added a little diced onion to each layer. I've had richer in Lyon but not better. made with love from mom for her little chubette of a daughter! Love you, Chef John!

Don t get me wrong the French scallop potatoes gratin is wonderful, and I do make them occasionally, but your mom s scalloped potatoes are what I think of and what I cook when I want scalloped potatoes. Thanks for sharing this recipe, chef John!

I really like that phrase. There are a bunch of dishes that always transport me back to 9, 10, 12 year old me and I'm back with my grandma, or my mom.
