Chocolate Puddino - Italian Chocolate Pudding (Budino)

After countless requests, and with Valentine s Day coming up, I finally decided to do a chocolate pudding video. I also decided to adapt the starch-less, and much more chocolaty Italian method for budino to produce it, which is why the word puddino is now part of the language (or at least that s the plan. Mango: Do you think this would work with white chocolate chips? I have the granddaughters coming over. I also have some (marked down 75%) white chocolate chips. The most important part, by far, is the fact that they have ELSA and ANNA on the package. So I think this would be fun.

I don t know if you ll see this, but I m hoping you can tell me if your alternative method to avoid tempering eggs would work for this chocolate pudding recipe from my mom s old 1961 Betty Crocker cookbook:
1 cup sugar
2 tbsp cornstarch
1/2 tsp salt
2 cups milk
2 squares (2 oz) unsweetened chocolate, cut up
2 egg yolks, slightly beaten
2 tsp butter
1 tsp vanilla
Mix sugar, cornstarch, and salt in saucepan. Gradually stir in milk (and chocolate pieces) Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Remove from heat. Gradually stir at least half of hot mixture into egg yolks. Then blend into hot mixture in saucepan. Boil 1 minute more, stirring constantly. Remove from heat. Blend in butter and vanilla. Pour into dessert dishes.

I'm wondering if the addition of alcohol as a flavoring would affect its ability to set, or somehow prevent you from achieving that lovely texture. Think, for example, some orange or cherry liqueur added to the mixture, or something nutty, like Frangelico or amaretto. Do-able, or no?

Turnabout, John: why go to all the strain of pulling the funny things off the yolks, when you're going to just use a strainer to catch the funny things that might have been stuck to the yolks? I'll do that when you can explain why that extra step is necessary. :D

How I get the egg away from the yolk is by using a water bottle. Use a empty water bottle.
Squeeze the water bottle upside down where the mouth part is on top of the egg and unsqueezed the bottle. The egg will go into the bottle and the yolk stays behind.

If we are going to be the Patrick Mahomes of our cream based foams do we have to get turf toe, too like he had for the SB game? Wish my Uncle Mario showed me this version instead of basic box chocolate pudding back when I was 10 years old!

I am very excited to try this, because the last pudding like dessert of yours was just as easy to make as this one seems and when I made it for my family it was a huge hit. My grandmother hates desserts, but she asked for the recipe.

Those egg whites will be delicious when you fry them in some good quality olive oil on the lowest heat possible, basically poaching them. Adding some ground cumin over the top is also great and then all you need is some nice bread.
