Very similar to Byelorussian Kalduny(direct translation is 'Wizards'. The Byelorussian recipe differs slightly, the potatoes are ground finer, with that spiky end of the cheese grater, and with onion grated in with the potatoes that turns the mixture green, and they tend to have more filling which requires extra cooking in a crock pot after frying them.
Well worth the extra effort though.

Coming from a half Polish and half German family, I've had my fair share of potato pancakes through the years. Soooooo good, you are right about the sour cream. And even though my mother is a purist when it comes to old recipes, I myself would fully enjoy the addition of sausage! Thanks for sharing chef!

Potato pancakes are kind of the best platform for like anything. You can add so many different flavors to them and they are so versatile. I like to make mine with gochujang kimchi and Asian white flesh Redskin sweet potatoes, plus of course some grated Ginger. It's so awesome.

This is rad, but I still don't understand; why go to the trouble of buying a sausage shaped into a link only to break it up? They make sausage without the casing so. what's the deal? Never addressed.

I hope people know how easy it is to make creme fraiche, and way better than most sour creams. Chef has a recipe for this too. Oh, and you can make it with coffee cream just as easily.

I couldn't do it without browning the sausage first, at least part way. Big Nope. That done, they'd be delicious, but I'd go sour cream and applesauce, like you do with latkes or piroghi.

Add onions, nutmeg and fresh parsley to the potato batter, fry in clarified butter, top with applesauce and you get the number one German grandma dish, which is delicious.

He certainly started it out right. Just because you CAN put onions on literally everything, doesn't mean you should. They belong in the trash, and nowhere else.
