There is an heirloom Amish to. ato called the Brandywine. It was described to me by the elderly owner of a large greenhouse as the ugliest, but best tasting to. sto you'll ever grow. It's a kidney shaped fruit that comes in red, pink and yellow with just a thin layer of seeds under the outer edge with a meaty center. Really good!

Hi chef john once i simmer the tomatoes down i keep skin and seeds in and blitz in food processor. Smoothes out texture and thickens up. You can also puree the raw tomatoes before simmering if prefer. You should also try roasting tomatoes in oven vs simmering. Get more intense flavor. Love the video. Happy gardening!

Iv been making this for years, I think the fresh tomatoes are a much better flavour, and yes after watching goodfellas I slice garlic with razor blade, your tomato s look beautiful, I have to go to farmers shops and markets, iv tried growing them, I can t get rid of pests, and don t like using all the chemicals.

You need a victorio food mill. It's what I have. It separates skins an seeds just like you did. However you can run that separated seeds and skins 5 or 6 times and get all the juice. Plus it's easy. Also I roast the tomatoes first then throw everything in cook it down to the consistency of your preference.

Hey Chef John! Have you ever had a Caesar before? It's our national cocktail up north in Canada. It's a bit like a bloody mary but with some clam broth and lots of worcestershire and tobasco. It's wonderful when you've got some fresh tomatoes in season. Highly recommend.

I noticed you left out the veal, beef and pork. Ya know, Vinnie says you got to use all three. Pauly would be disappointed you didn't slice the garlic thin with a razor so it dissappears in the sauce. Oh well, at least you didn't use too many onions!

I never strain my sauces.
I take a blending stick to it & pulverized it.
also, I add only salt, no other herbs.
this way I have more options on how to use my sauces.
I freeze it in bags for future use.

I can't go back to my college days of just cooking pasta and pouring (store-bought) sauce over it anymore. I have to finish cooking the pasta in the sauce whenever I can. World of difference.

My husband thanks you because every flat surface in our house has a tray of ripe tomatoes of every size and color and the pressure canner is still in the Amazon box laughing at me.
