I ve wanted to do an updated chicken Marsala video for quite a while now, but it was brought to my attention that I ve never posted a video for chicken Milanese, so I decided to mash up these two iconic dishes, and I couldn t have been happier with the results. Godspeed: I wouldn t cover with plastic wrap and put in frig cause that method promotes moisture giving a gummy panko flour which reduces the crispy result of the chicken. Take the chicken out of frig 15 minutes before frying to take the chill off before frying.

Genius! I can t tell you how many times I have given myself club hand with the old three plate station method! I don t trust seasoned flour. Just became my new motto! Lol Beautiful recipe! Thanks Chef!

I was surprised you didn't finish the Marsala sauce with butter to make the sauce more luxurious. But hey, you are after all the Bob Ross of your Marsala sauce.

I'm not a big fan of recipes that use chicken breast over dark meat, but that looked delicious. Could you do this with a boneless thigh fillet, though?

I have used white rice as a starch side dish for Chicken Piccata. Would that work with the Marsala Sauce or maybe try a wild rice blend?

Timing is wild, just last night I made a very similar sauce but added cream and put it over ravioli. I'll try this version next time!
