Learn how to make a Thai-Style Sweet Chili Sauce Recipe ColoradoFarmerJoe: Hello, I am a pepper farmer, and I personally produce probably half a ton or more of peppers for sale every year. I grow jalapenos, anaheims, bell peppers, pimentos, and a variety of mexican chiles. Suffice it to say, you might call me a pepper expert. I know that with almost all peppers, they are actually spicier if they are green. I know, I know, it sounds like it's wrong, but you have to try to understand why the pepper plant decides to make itself spicy. The pepper plant wants to be spicy when it is young to protect it's seeds from being eaten because they are not ripe enough yet. However, at a certain stage in the pepper's development, it actually wants to be eaten by creatures, because it's seeds pass through animals and then are deposited in the fecal matter of the animals, which plants a new pepper plant. That is why red peppers have more sugar and less capsaicin than green peppers. I believe that the stereotype about red being spicier comes from the fact that bell peppers developed to be sold red are typically a little spicier than bell peppers developed to be sold green. However, if you leave them on the plant, green bell peppers will turn red and then be less spicy. Similarly, the bell peppers that are sold red will be spicier if eaten green. I've never grown these Thai peppers but it would really astound me if they go opposite to the law of peppers. The law of peppers states that green peppers from the same plant are always spicier than the red peppers.

I don't care what ANYONE says. this Thai Sauce is THEE BEST CONDIMENT EVA However. out of the 4 types of meat, red meat is the least favorable to use this sauce on. I sometimes get a craving for my breaded shell seafood trifecta. Breaded clam strips, Panko Crumbed shrimp, Stuffed clams on a half shell, and some type of white fish like Tilapia, flounder. Chic o Filet fries, slaw AND A BEER LANDSHARKUpdate. Since Chic o filet stopped serving their AWESOME coleslaw I stop going there. I loved slopping their slaw on top of their samitches and dipping the fries in the slaw juice. Just think. the leftist SJW'S boycotted C. O. Filet cuz they are a Christian owned Corp. who believes marriage is between a man and a women. I support ChicOFilet on their stance 1000% but I DO NOT agree with corporates decision to remove their incredible slaw from their menu. Bye bye ChicOFilet. it was fun while it lasted.

It's kinda sounds like you are asking a question mid sentence every sentence. I don't expect you to care that much but it is a bit of a problem I had watching the video. Your speech patterns are a tad annoying. i just feel like if you could keep the low note at the end of your sentence a constant or at least learn to use the high note in your speech payers a lot less it would be a lot more pleasing to the hears. None the less the video and recipe was cool and I will try once i get a chance.

I've heard him say Asian fish sauce on a number of recipes. He really should be specifying Thai fish sauce, since other nations in the area have their own fish sauce which tastes different. (Laos definitely, I assume Vietnam, also) Look for the Golden Boy brand, although others are good, too. you often see the Squid brand in stores, which is pretty okay. (No squid in it, that's just on the label)

Those peppers are actually easy to take the seeds out but irritating when you have many. You simply cut them in half length wise with a kitchen utility knife, lie them on their back and you scrape the seeds with the tip of your knife. And he's right you know. Don't go touch your privates after handling them. Some employees refused to handle them without wearing gloves where I once worked lol

I like to fantasize that I am the Batman to Chef John's Joker concerning south east asian food. Chef john relishes in the chaos and comedy of bastardizing everything that is Thai, Vietnamese, and so on, while I bring order and justice by strictly making things as ass-blazingly, fermented fish-gutsy, and exotic-herbily authentic as possible for a white guy in new york city.

I make sweet chilli sauce with rice wine vinegar if I can find it, if not then apple cider vingar (you can't taste the apples. White vingar is very sharp I find it over powers it but I do add a lot more vingar than Chef John does as I'm paranoid about getting the acidity right was I will be bottling it for 6 months to a year.

Good video. but its soooooo hard to listen to your narration. It sounds as if each sentence is meant to be the only sentence in the video and or you're a robot reading bullet points. I thinks its due to way you say the last word in each sentence. Nevertheless, it bothers me sir. lol have a good one.

Are the Chilies as hot after they're cooked? I grabbed one at the store and got the eyes like I wasn't grabbing enough and decided to get a handful. I'm not sure what to put them on because I don't wanna fart fire the next day. But don't get me wrong, I looooooove super spicy foods.
