This budget-friendly version of Beef Wellington features a crispy puff pastry wrapped bacon cheeseburger, and is sure to impress your guests. Just don t tell them how easy it was. Greg: Excellent idea. I do think it would be more fun to make it as a log with things like cheese, bacon, sauteed mushrooms inside the meat log. It would be great to serve to a small group on game day. Also, I think it still requires being wrapped in a crepes but one could play around and season the crepes to work with the cheeseburger -- how about some tomato paste in the crepe batter? Even if you f ck up the recipe it won't cost much to make and still taste delicious. Thank you Chef John.

Was at a friend's house who was about to prepare beef wellington for a party of six.
She went all out and broke the piggy bank for this meal.
Then suddenly, her brother-in-law called to say her sister was in labor early and he was bringing their four kids to stay with her as previously arranged.
She freaked out.
I went to the fridge and plopped a pack of ground beef on the counter.
She said, no way am I feeding them cheeseburgers while we eat wellington.
I said, the thought hadn't crossed my mind, but people feed kids hamburger steaks when they eat real steaks all of the time, so why not a 'burger-llington'?
She excitedly said, you do it!
It turned out great with the traditional wellington ingredients and the kids bragged that they got to eat burg-ington while their mom had a baby.
We stuck with the name the kids used.
After that I made some individual ones for some kids at another event, they were also unexpected guests.
Necessity always sparks invention and/or alteration.

Loving these puff pastry videos recently, by the way. I made that mushroom, chicken, and cheese strudel for my parents a few weeks ago. Changed some of the flavors around to suit the diners' tastes (including mine, but followed the technique to the letter. First time making it, and almost my first time working with puff pastry. It was superb. A pastry chef would probably know it wasn't made by a pastry chef, but I'm not a pastry chef, so I was fooled. And by going pre-made on the pastry and the roasted chicken, the biggest time-sucks of a scratch recipe are eliminated. Hell, you could use that strudel technique on some leftover casserole (as long as it's a thicc casserole, and you've got a last-minute potluck dish that would make every other contributor hate themselves. If you're into that.

I have a serious question in regards to the burger: Isn't it dangerous to sear it and then transfer it to the fridge? I am an amateur by all accounts, but my understanding was that allowing hot food to cool in a fridge allowed for bacteria growth. I know that's significantly less of an issue with steak since bacteria can't penetrate as deeply into a solid cut, hence why it can be eaten rare - but burger patties are made of ground beef, isn't there a higher risk of contamination or propagation of bad things of all sorts in there?

Once I started eliminating cheese from burgers, even McDonald's burgers taste so so much more like a real burger!

Hmmm. me thinks this is Burger En Croute ( which is really my choice) and not Wellington. I thought, and was Taught that Wellington involved Yorkshire Pudding. Yorkshire Pudding is the Top End Totally Temperamental, Dangerous Accompianment to Expensive Meat Ever. and just tastes Dreadful.
I think this is a Clever way to punch up a Common Dinner, but it really isn't Wellington. Thank God!

I am no big fan of blood aka meat juice on bread / pastry and it is quite a lot of work and preparation. so not quite an easy one pot recipe.
I am craving dan dan noodles lately though. to a degree that I dream of them. with tons of red chilli oil and roasted sesame oil and peanut crunch and crunchy spring onions and garlic and all the spices. oh sigh. If I had a pound of ground beef and a leek.

lol, I love Chef John, so I hope this doesn't hurt any feelings. But I just have to say one thing after watching so many of his videos. it seems like every sentence he makes? Sounds like he's asking a question? And he verbally puts a question mark on the end of every sentence he makes? Even if he doesn't mean to?

I feel like Once it turns foamy, your bacon's done homie needs to be cross stitched onto one of those embroidery hoop frame decorations your grandma had way too many of at her house when you were a kid. And while I'm still kind of chuckling over that, you hit me with CHEESE NIPPLE. oh wait, I mean navel. You outdid yourself here, and not just on the recipe.

I know what I'll be making Hubby for his special birthday dinner! He is a burger freak. I even happen to have puff pastry, ground beef, & cheddar in the freezer already, what are the odds? I might add a chunk of cheddar to the center of the burger to make a Molten Bacon Cheeseburger Wellington, but 'that's just me cooking'. Thanks Chef John!

Love the Idea, I m going to do a tiny bit more work, and make two bite sliders. I m inspired by a mix of ground chicken, fried onions, the crispy ones made by Frenches, and blue cheese. A splash of your favorite hot sauce, that s the filling. A sprinkle of celery seed over the egg wash. Chicken wing Wellington. Thank you Chef.

Chef John, your videos have taken me from a meh home cook to a great one, and I'll always love ya for that, but this? The dish looks great except for the design on the pastry, which looks like a giant asshole. With brown gravy too? I guess if anyone could make you wanna eat ass it's Chef John. Now that's real OG.

I guaran-damn-tee this creation required a little herbal therapy to come up with. I'm not knocking it, I just don't see how a sober mind would come up with this. Love it Chef. In the great words of your Grilled Cheese video I will partake of this tomorrow after I make myself 'extra extra' hungry.

Ooooh. I do like a cheeseburger Wellington. Though I think I'll go with my own concoction for the seasoning on the patty. I actually mixed up what I call Me Krabby Patty Secret Formuler.
Though I'll be adding a shake of cayenne. after all, what's a Chef John recipe without a shake o' cayenne?

I'm British, and admittedly we stole most of our fine cuisine. HOWEVER. Beef wellington is made from a prime beef cut. making it from mince is blasphemy.
Fish and chips are awful. But leave our beef wellington alone; )
