This is my favorite version of the comforting, classic French dish of chicken, which is browned, and then stewed in a super savory, creamy sauce flavored with mushrooms, and white wine. This is a must-make for any serious home cook Faith's: A real life person that will pick out evenly sized pieces? Hahahaha!
Chef John what is that pan you are cooking in? Is it cast iron? I like it! Oh I see it is some kind of enameled cast iron but I don't know that brand.
Sauv blanc is my fav!
Oh def cooking is what I do to de-stress. I had a volunteer / job interview and they asked what I did when stressed. I said I cook! I got the gig as a camp host at Priest River, Idaho, next season! I can't wait!
Ohhhhhh you cut into a piece when your wife was in the other room in that very very very nice enameled cast iron pan! You bad boy! hehehehe

As a 55 year old who has gone to culinary school, I ve always thought fricasee was a word made up by Buggs Bunny. In fact, I often answer my wife s daily inquiry as to the evening meal with some made up variation. Meat loaf fricasee, Cheetos fricasee, fish sticks fricasee, you get the idea.
Tonight, I ll make this and proudly announce We re having chicken a la Mitzewich.
And never tell her the truth.

No joke. When I saw the word Fricassee my brain immediately when back into the archives and dragged out that bit from Popeye Meets Sinbad the Sailor where the two headed ogre is arguing with himself whether or not to make chicken frick-a-see-sees out of Popeye. Funny sometimes not only what will stick with us. And now, after all these years, I actually now know what fricassee really is. XD

I was at the grocery store yesterday. I noticed that the price of a package of chicken that used to cost about 7. 00
now cost 24. 00.
Needless to say I'll let that food rot in their store before I get ripped off like that.
I really hate getting political here but, I have to say the corporate price gouging is inflation.
I welcome any and all comments to mine pro or con.

SAVE THE CHICKEN FAT FOR GRILLED CHEESE? The man is a genius. I think I would also like to saute sliced mushrooms as well to add to the cheese in the middle, and then grill the sandwich, maybe with a sprig of thyme in the pan as well. We can have the fricassee tomorrow.

Rabbit is very good and good for you, Jon you really should promote rabbit and quail along with quail eggs, quail eggs are so much better nutrition than an egg, yes it takes 4 quail eggs to equal one cage raised sad chicken egg

Thanks Chef John! I have some thighs in the fridge I can t decide what to do with now I do! Also, hearing the words Chicken Fricasse makes me think of the buffet scene from Fargo where the deputy asks Margie How s the Fricassee?

Being from South Louisiana I would say this looks delicious! We would make this almost the same, but use the trinity of onion, bell peppers, and celery, and serve over rice. So good and comforting!

Every day the same thing: variety. I want something different. Bring me hasenpfeffer! And then Yosemite Sam tried to turn Bugs Bunny into hasenpfeffer for the king, with predictable results.

Chicken fricassee is immortalized in the movie, Life With Father when the father requests chicken fricassee and the mother says its gone up in price, and so isn't economical.

love the recipe, but i think i would leave out the flipping and the basting to preserve at least some crispyness on that skin. Sill love the video very much
