I have a gingerbread cookie recipe that came with the cutter. It requires the dough to be cooked on top of the stove briefly and it makes a great cookie, though I keep bumping up the ginger content.
I don't see how this technique is any easier than rolling and cutting, especially since I learned how to roll and cut cookies on top of parchment and then remove the negative dough, rather than try to transfer the cookie to cookie sheet with a spatula. Makes such a difference!
This year I'm going to try my hand at a Christmas stollen, something I've never done before. Wish me luck!

I made a gingerbread spiced pound cake where I replaced the clove with lavender. It was honestly the best spice blend I've made in years. The lavender had a lot of the same notes as clove, but it removed this heaviness from it and instead felt much lighter and subtler and let the other spices through much better. Absolutely recommend anyone to try that.

As a child, from time to time my grandfather would let grandma sleep in and make pancakes for us for breakfast. When he did we were only allowed to use Sorghum Molasses. Making Gingerbread is the only reason Molasses has a spot in my pantry. How long will molasses last in a pantry being used just once a year to make gingerbread cookies?

Thank you Chef John, absolutely love that you put the black pepper in the recipe. A little fennel, anise, and cardamum will make a more sophisticated flavor profile too. I add anise oil to my icing for that extra punch of flavor. Heading to the kitchen right now! Thank you and Merry Christmas, Happy Holidays

Downsize to move into a smaller place recently and apparently one of the things we got rid of was all of my cookie cutters and such piping bags. This looks like a real good option for someone starting out or for people like me that just don't have the stuff anymore.

I do have a snowflake cookie cutter but it is by far my least favourite holiday cutter we have. I am all about the Christmas tree shape. When putting them on the cooling rack you turn every other one upside down and maximize cooling rack real estate

Too funny! Just yesterday I said something about putting black pepper in gingerbread and got booed from the kitchen. I never thought about cayenne. Or the cocoa. Will have to give it a try. I need to make a batch of cookies for a cookie exchange

I haven t baked gingerbread cookies since I was a child. But this recipe looks so yummy & the fact that you can create such beautiful shapes without a cookie cutter! I m gonna make them this weekend

That s very clever, but cutting the dough would be so much faster IMO. Maybe it s just because I ve cut cookies for 40 years and it seems like an easy technique.

This does seem a lot easier than the roll out + cookie cutter method, and they turned out reasonably well. I do believe I will make these with my kids!
