If you re looking for a deliciously decadent, yet very easy to make chocolate desert for your special someone on Valentine s Day, this is flourless, Torta Caprese, might be just the thing. IcePike: My rule of thumb is never use the microwave when cooking if you don t have to. The main use for my microwave is to defrost frozen food and reheat some leftovers. If it s possible to reheat my left overs another way then I usually do. Left over stew for instance isn t going into the microwave. A burrito, yeah, that s going into the microwave. I remember seeing a thing a long long time ago showing water molecules heated over a stove vs a microwave and also seeing studies on vitamin loose in vegetables microwave vs stove and that s what got me to mostly stop using the microwave.

This looks like fun to make but I am very allergic to almods - any thoughts on a substitute. My wife uses artificial almond extract for things to get the almond taste so that part is possible. Maybe something like coconut flour. I keep peanut powder around but I think it would be too strong of a flavor for this dish (not for me, I think PB is a food group. Great video! Thanks!

You re deadly wrong about the difference in texture between the cake made with beating the eggs with and without separating the whites. If you beat the whites and mix them afterward it becomes another thing. Yours is way too flat and firm, and the top is not crankly like it should be. Sorry man, this is just a chocolate cake, Caprese is another thing

Aside from being age appropriate and available (and kind and decent, now that I am single, I would like whomever I finally decide to date to be able to cook and bake. Or at least one or the other. Haha I baked a very similar chocolate cake just a few hours ago, but I used cake flour with baking powder instead of the almonds and whipped my egg whites separately with sugar: ) Perfect spongey consistency so my testing for valentines day was a great success, might also give your version a try tho!

Hmm. I wonder if I could use monk fruit sweetener instead to make a good KETO version? That is a not so little amount of chocolate and the way the cost of food is these days, no one wants to waste, food which is money. Thanks for the sweet memories.

Chef John you put the drips of batter on the counter on purpose just so you could make a joke just like you always use the wrong utensil or too small of a bowl, pot or pan. Also, I m surprised with you definition of a little touch of sugar.

never tried the cooling rack powdered sugar trick--my italian mom used to place a paper doily on top of her chocolate cakes before sifting over powdered sugar. i'll keep the cooling rack trick in my hip pocket for whenever i run out of doilies.

Chef, you had me at chocolate! I just need to to find almond flour. I think I ll make this for my birthday. Hubby and my son can deal with it.
And you re lucky you got to go into the Blue Grotto. It was too choppy when we were there.

Since some people really want flourless to be flour-free, do you think cocoa powder would have been a good choice instead of the flour when prepping the pan? This looks delicious-can t wait to try it!

The only time I feel lonely around Valentine's Day is when I watch the annual lots of compliments recipe from Chef John. But then I make it and eat most of it myself and feel better. LOL

Tried it and woah! It was extremely rich. Are you sure it isn t teaspoons instead of tablespoons with the cocoa powder? Honestly I m thinking I might omit that ingredient completely.
