Regarding the chicken temp. Only a fool would trust health and safety advice from the government after what we saw over the last 4 years. They’re pretty much wrong 100% of the time.

very good, use those sauce ideas. I always think of beef borg. cassula, wine in simplictiy and ease, fortified with butter and cream and herbs. berniase ect.

Why use bubbly wine There is absolutely no way any of the bubbliness will survive. At that point, its just a normal white wine. So why not use that
