We are giving crispy taco shells the day off, and instead of the usual delivery system, we’re filling butter lettuce leaves with the most perfectly seasoned taco beef recipe I know. This lighter, brighter, more vibrant alternative to a taco is topped with cheese, tomato, and green onion, and can be served portioned on a tray, or set up as a taco beef lettuce cup bar.

This looks like an adaptation of a Korean ssam, which are bite-sized (more or less) portions of meaty, savoury goodness wrapped in a leaf of lettuce. A concept I was initially quite sceptical about, but after trying it out, I absolutely fell in love with it and have introduced it to numerous people ever since, to no complaints whatsoever.

This is great. Sort of Mexican Sang Choy Bao. I will do this because it looks really tasty, and because we have some family members with Celiac disease and this version has no risk of any gluten. Corn tortillas and taco chips are meant to be gluten free but it really depends on the manufacturer.

Thanks, Chef John! I made the taco meat recipe tonight for my wife and me. It was delicious! We made some tacos with bib lettuce and a couple with tortillas. Awesome! I will not take taco packet shortcuts again. Thanks!

Top 250 like! a new record! Beautiful presentation. I have green onion and the other ingredients except the lettuce so there's a shopping trip in my near future! Looks like butter lettuce, which I love.

I love the salty crunch of taco shells, but they can be so obstinate sometimes. Gave me the idea to make these, then sprinkle over with lightly-crushed Doritos (an inside-out taco)

I was making this back in 1995 when I worked at Wendy's. They keep track of buns but not chilli meat so to have a little snack Id use lettuce and make a little chilli bowl

Reminds me of when I wrap my Korean marinated beef with lettuce: D no need for rice, a bit of sauce, the delicious meat, and that sweet crunch of lettuce is all one needs

Oh, yeah! I cooked this tonight. It was gooood.
Cook it just the way Chef John says. I only had an iceberg available, crunchy awesomeness.
10/10 - will cook again.

Thanks for the (mostly: ketchup is a no-no, but some pasata with a touch of stevia would probably sub nicely) keto-friendly recipe: I’ll be trying this!

ever since trying to emulate taco bell beef, I always add some steel cut oats to my taco beef, gives that interesting chew and absorbs a lot of flavor

Of course Chef was referring to the Aeon Flux of the '90s MTV animated series, and definitely not the Aeon Flux portrayed by Charlize Theron in 2005.

Aeon Flux of your Taco Beef Lettuce Cups, is just a next tier joke. Bravo, and thank you for years and years of wonderful tastes and videos!

When you have to resort to recipes like this, you can know that you’ve done it all. It’s been a great run and it’s time to retire.

These are great if you're looking to cut a few calories from Taco night but also terrible because you wind up eating a dozen of them.
reply

John, I'm glad you mentioned it to be Mexican oregano, we use nothing but for everything especially italian, it adds such a wonderful depth
reply

Yummy thank you Chef John
I recently got dental implants and can't eat crunchy tacos, and these will work with soft lettuce

reply

I feel like ketchup gives it that sloppy Joe flavor. Maybe I would add my favorite salsa instead with a little bit of sugar.
