Roasted Rhubarb Salmon - Food Wishes

This unusual, but very delicious roasted rhubarb salmon features thick-cut fillets topped with a tangy, citrusy, subtly sweet rhubarb sauce. Not only does the rhubarb component pair perfectly with the fish, flavor-wise, but the cooking method used to combine the two produces a perfectly moist and tender texture.

I always loved helping my mom in the kitchen chopping, stirring, just being there. Cooking has always felt like love to me.
But life happened and little by little, I drifted away from it. Things got heavy. Eventually, it was cooking that helped me pull myself out of those dark moments. When I’m in the kitchen, my mind finally gets quiet. I truly recommend the book The Healing Pot by Manifest Zen. It describes a very similar journey facing depression and anxiety, and finding peace through simple rituals. It’s a gentle, powerful read for anyone going through something similar.

LOL! It took me a second to get the chicken and Birdman comment! I would never have thought to pair rhubarb with anything other than the traditional British dessert, rhubarb and custard. That was a seasonal and very typical dessert served in my childhood. And that was then and still is a hard no. However, in a savory dish it might be okay.

My mum loves Salmon and grows her own Rhubarb so sharing this with her, especially as Jersey Royal potatoes are in season (I'm in the UK) along with some Asparagus tips. Mums Birthday just passed and due to work can't see her till next week, may have to cook it for her. Thanks again for some weird and wonderful but simple recipes.

I've moved somewhere that rhubarb season is sort of a big event and I've never figured out what to do with it. Rhubarb salmon would have never been at the top of my list, but I'm willing to give it a try! Fingers crossed for the unexpected paying off! :D

Nice recipe, adaptable as all dishes are that he does, to other fish I suppose and other fruit coverings. Not a fan of rhubarb except in rhubarb and strawberry pies, so might try this same and substitute some not so ripe strawberry instead.

Mmmmmm Rhubarb, I still remember being a kid and grabbing random stalks and munching on them. My family nor grandma ever seemed to actually plant them. They just grew along the fences.

Whats the difference between sauce and chutney I mean, I'm from TN. So sauce seems normal speak for just about all things liquidy that isn't gravy or soup. But I just wondered.

my grandmother had rhubarb growing wild in her garden. She used to boil it in aluminium pans to clean them (shudder. Couldn't stand the stuff but love it now.

Well rhubarb sauce would be a good side for salmon, so this makes perfect senseI’ve seen Jamie Oliver do savory dishes as well.

Never would have thought to combine rhubarb with salmon; also, never seen it anywhere else. So unique! Def. have to try this!

I'd leave out the onion; it ruins the flavor of the fish. Or just roast the salmon and serve the sauce after its been cooked.

I have green rhubarb and have never actually cooked with it. Would it work the same, or would i need to adjust the recipe
