Gordon, with a little help from fish-expert Roger Kent-Barton, gives the lowdown on what fish is best for what occasion. tchevrier: living in the centre of Canada it is difficult to get fresh seafood. Most of it has been frozen and frozen seafood is nowhere near as good. That said, we have thousands of fresh water lakes and to be honest I think fresh water fish is nicer. Its more delicate but I find it has more flavour. Cod fish is a bit of a sore spot with Canadians. We have, or used to have, the largest stock of cod fish in the world until the europeans fished it dry (pardon the pun. Now, not only can our own fisherman not fish for cod, but if we want to buy cod, we have to buy it from europe. Bloody hell as the brits would say.

growing up on an pacific island, the smell of the fish and the color of the gills (although there are chemicals that can prevent hemoglobin in the gills from oxidizing (turning dark) and the elasticity of the flesh (same, there are chemicals that can also enhance/prevent loss of elasticity) are the three key signs to determine a fresh fish. I trust the smell the most. sometimes I ask the fish vendor to take out the guts for examining.

Ive run a large grocery fish market before, with a great deal of passion. The grandest feeling is of a forced out delivery of a little known fresh, whole fish, and it is a rare occasion. People still want the colored salmon already in fillets because of the price and ease of cooking. Take the time to prep whatever beautiful rarities you come across. They may just surprize you.

gordon does not have the faintest idea about fish, in one of his videos he shows a gild headed bream (probably farmed ) and mistakes it and alls it a black bream. Gordon know about fish as much as I know about astrophysics

0: 44Sorry mate, it doesnt work like that, i doubt a fish seller will let me shove or rub my nose physically on a fish like that. and on the flip side, not sure i want to buy a fish knowing people rubbed their noses on it.

I wish we could stop mass producing and mass killing animals in disgusting ways, if people start eating quality homemade food and nice restaurant food rather than fast food then they wouldnt even look at fast food
