Whenever you are craving for a refreshing dessert I suggest you try these lemon bars. They are made with a very flavorful and tangy lemon filling on top of a rich, buttery shortbread crust. If you like lemon desserts you will definitely love these bars. Ingredients Makes about 20-24 bars Crust 2 cups (250g) all-purpose flour 1/2 cup (100g) sugar 1/2 tsp (3g) salt 1 cup (226g) chilled unsalted butter, cut into small cubes Filling 1 1/2 cup (300g) sugar 1/4 cup (32g) all-purpose flour 4 eggs 2 tbsp (12g) lemon zest, from about 4 medium lemons 2/3 cup (160g) lemon juice, from about 4 medium lemons For sifting the top Powdered sugar 1. Preheat oven to 350F (180C. Grease with butter a 9 X 13 inches (23x33cm) baking pan. Line with parchment paper. 2. Prepare the crust. In a large bowl combine flour, sugar and salt. Add the butter and using a pastry blender or simply a fork cut in the butter until crumbles are formed. 3. Press the mixture onto the bottom and edges of the prepared baking pan using your fingers and back of a spoon. Bake for about 20 minutes until lightly golden brown. Set aside and let cool slightly. 4. Meanwhile prepare the filling. In a large bowl whisk the sugar with flour. Whisk in the eggs and add lemon zest and lemon juice. 5. Pour the lemon mixture over the prepared crust and bake for another 20 minutes until set. 6. Allow to cool completely at room temperature and if possible refrigerate for a couple of hours before serving. 7. Sift powdered sugar on top and cut into bars using a hot knife.

Maybe I did something wrong but I had to do the second baking for almost on hour. It seemed there were absolutely no way for it to set in 20 minutes. Nevertheless, these bars are gorgeous Sweet and sour and salty. The tecsture is so soft and chewy I dont think there is a person who wouldnt love themThank you for the recipe, I'm sure I'll bake those more then one more time)

Okay, so I made this it was okay. None of my little cousins ate it. It had a WERID smell of eggs with that over powering taste of lemon. It was sweet but too sour That it could not be eaten. I would say add less lemon juice then what it calls for. It's just a really good looking recipe but it doesn't taste at all as good. Sorry

This is such an amazing recipe I have tried it twice now - no need to alter ingredients or time. My mother in law LOVES lemon bars and asks me to make this recipe everytime I'm there. Definitely recommend this for anyone - easy to make and delicious Perfect balance of tart and sweet, with that buttery crust on the bottom.

I just finished making mine earlier, just got back from eating two slices: 3 mine was so tart, I think it was my fault for putting extra lemon because I had extra juice so I just poured it in I bet it would taste better if I didn't put to much lemon, will try again. Thanks for sharing
