S. here - dumb question it looked like Mr. Oliver was eating the skin which we typicallly remove? Any other thoughts or opinions? Thanks much from the East Coast!

Jamie, have you tried salmon belly? It's cheap as fries here but the salmon fillet is twice the price than in the UK.
