Geez now you're just showing off. we can never have that elegant gorgeous stuff and you devour it in front of us? You unsympathetic, inconsiderate jerk! That said, at least I live in an area with a reasonable bounty of truffles and local, small batch artisan cheeses utilizing it are pretty easy to find anymore, though they're all over 20/lb. At least tasting samples are free! It does require something with a strong (identity-wise, not strong like Stilton, salty-sharp base to handle truffles.

PS while I do generally stick to a small footprint meaning local farmers markets over cheap grocery store mess, I found a local store (called DeLaurenti) that has Westcombe Cheddar. if it is in stock you have piqued my interest. My favorite is surprisingly a Cali farm, Bravo Farms, and their Silver, sage, and (one step down from silver is my eat by the kilo pick) are delicious!

Hey! Could you make an April Fools Day themed dish please? I saw a video where a Grilled Cheese sandwich was made with a toasted pound cake and yellow buttercream for the cheese. Would love to see what you could come up with: )

So this may well be the most expensive cheese in the world (not counting gold wrapped or otherwise ridiculously/artificially overpriced products)
