I personally despise ginger because of its spiciness however I'm willing to try this recipe. When you ate it, how did the ginger taste like with all those other ingredients? You mentioned that it was slightly sweet but how so? Well if all else fails and I don't like it with the ginger, could I replace the ginger with fresh coconut?

I doubt this is Jamaican. It just looks like parkin with a bit of rum and a couple extra spices thrown in. Smh. Caribbean people don't bake with golden syrup and treacle. Brown sugar and molasses is what you'll get from sugar cane that will be reasonably priced down here.
