I'm violently allergic to any kind of seafood, and all mushrooms, but I still love your videos! (Especially the artistic designs) I can see how those seasoned shiitakes would add tremendous umami to lots of dishes.

I find it easier when trying to hydrate shiitakes, if you have one, use a lid that's just a little too small for the pot or bowl to hold them under the liquid rather than a paper towel
