Lasagna was a great idea! Here is an ideas for small portions: dessert! We love dessert, but we don't want to have to make a whole cake, a whole key line pie, a whole pan of brownies, etc. and then have it on hand and feel like we need to eat it all, when we just had a craving one night. We either end up eating it even if we don't want it, as not to waste it - or eventually throw it out, which is wasteful.
If you're only asking about dinner ideas: chicken pot pie, shepherds pie, brunswick stew, chili, homemade bread (for small pizza, a couple sandwiches, a few pieces of garlic toast, etc.

Yummy never thought it be that easy, I always thought you’d have to use a pasta machine; the Italian cooks made pasta making look difficult. Definitely trying this recipe and freezing the rest for an easy meal when I get home from work tired.
Would love to see a recipe for tamale pie. for 2 of course.

Putting the effort in for lasgna and only making two portions is masochism. =)
JK, but also, this is definitely a meal where making a big batch doesn't take much more time and allows for leftovers.
I'll just say this. When I make cookies I never just make 1-2. =)

Although I have made pasta, I never considered scaling it back for just the two of us. One, 1lb package of dry spaghetti is enough for 4 dinners, which means I have an open package of dry spaghetti in the pantry.

I would love to see a one/two person version of the very cheesy baked Tex/Mex style enchiladas (beef, chicken, or cheese) that are smothered in chili sauce and topped with cheese, especially if there is a way to freeze them either before or after baking.

I'm a single person. I used to cook for my parents and siblings but after getting sick I have to eat a specific diet so I just cook for myself now. I don't have a specific recipe request but I'd be happy to see whatever you cook!

Yes, more recipes for 2! My daughter and 2 grand daughters moved out a little while ago. I'm used to cooking for a family of 5. Now it is just me and my husband. This recipe will be great for us both. Thank You!
