YUM. I've been making kimchi jjigae with Wild Planet tuna lately -- it's CRAZY good and such comfort food, and the tuna is extra umami-y and meaty. it doesn't come packed in oil, so I add a bit of extra perilla oil to mine, the same beef dasida you use, and also tuna aekjeot instead of regular fish sauce, though the regular stuff works fine, too. your version sounds wonderful as well! all kimchi jjigae is delicious, IMO. have you tried using the water from the 2nd and 3rd rice rinses as the water in the stew? it adds a little something, I think.

I love me some kimchi jjigae! It's my favorite comfort food these days (although your taco hashbrown cass is a big hit at my house too. I use ground pork and brick tofu in my jjigae. Beeler's pork is always soft, tender, and gristle free. That might be a local Iowa brand? . not sure.
