Here is an easy way to make frijoles charros. This method eliminates hovering over your stove and stirring the beans. I find cooking in a crock pot on low is convenient and frees time to work on other things. INGREDIENTS 1 lb pinto beans (washes and rinsed) 1/2 onion 4 cloves of garlic 1 to 2 tomatoes 1 jalapeno (or serrano pepper) 1 cup chopped cilantro 6 slices of bacon chopped 4 cups chicken broth 2 cups water 2 tsp salt (or salt to your taste)

I will have to sub out the bacon for Liquid Smoke. I don't like the flavor of jalapeno and Serrano is too hot so I will use I can't think of the name of it right now it's dark green and shiny and they make ancho chiles from it. Anyway I also would reserve a little bit of garlic because I find that long cooked garlic loses much of its flavor it's in the dish nicely but I like that little bit of fresh garlic flavor. The crock pot is my ride or die Appliance! I talk to my mother into getting one of The Originals when I was 8 years old and it's fairly tall and cylindrical and you can do a roast in it with some veggies but they're not very big she still got them! I have a nice 8 quart oblong electronic.

Okay, went to Menard's and got a 3 quart Hamilton Beach for 14. 00 dollars. Went to Meijer and got everything you talked about. I have a countdown timer so it will go off in 8 hours on high. I sure hope this all works. After I saw this video and how easy this was, I had to do it! 11/12: Came out great, omitted the meat, I don't trust meat in the slow cooker because most don't go above the 120 degree mark. Enjoyed this immensely. Mine were so thick, dumped it on rice. The beans were not overcooked at all, the skins stayed on, absolutely perfect. Like having mashed potatoes in the middle of the bean, which I understand is perfect. Gosh, this was so easy and great.

Thank you so very much for this delicious recipe, Angelica! I made this a couple of weeks ago, and my family loved it! I started it after my husband went to bed, and he woke me up around 3 am asking what was cooking. I had to move it to my laundry room to finish cooking for the night because it made him so hungry. LOL. I made it exactly like your recipe, and I will never buy canned beans again. On the same day, I made your Chorizo recipe, and it was awesome too. Congrats on going to the YouTube workshop. I hope you have a great time. Thank you again for your generosity and friendly manner. You are a special person! With love from Tucson: O)

We really don't real, ze how lucky we are in the U. S. to have the variety of beans that we do Here in Costa Rica, where I live now, it's difficult to find pinto beans without driving 4-6 hours. What you find here are red beans, black beans, white beans, garbanzos, and a kind of smoked bean. So, I'm going to try your recipe with the red or smoked beans. I'll probably have to use jalapenos from a can, since fresh hot peppers of almost any variety are difficult to find here. Thanks for the recipe!

We don't have pinto beans where I live right now, only Red silk beans. Doesn't matter, I'm gong to make this recipe in a cpl of days, when I feel like I can stand up without falling! I used to eat charro beans when my ex's grandma would make them (she used a clay pot from Mexico. I have missed them so much, as well as her. Such a lively, lovely lady! Thanks SO much for the recipe! I'll be toasting her and you with my first bowl!

This is how I make them as well. Many times I use a chopped green bell pepper and then add 1-2 Tbsp chile sauce (siracha brand in the Asian aisle. Also, some greek seasoning (very flavorful and full of garlic. For my large family, I will use about 1. 5 lbs of carnitas meat. I have frozen portions that I just plop on the top. I then add much more water and cook on high for 8 hours. SO GOOD! I will eat them for breakfast and lunch.

Seems delicious! Will try. Just as a tip, instead of putting the uncooked bacon or ham in so it cooks in the broth you can also cook it in a seperate pot for a bit so it releases the fat, cook there the ingredients and then throw your cooked beans (which you cooked in the crockpot) in the pot. In my experience it releases more flavor and texture like that and gives your vegetables more flavor.

I used a pressure cooker once, no twice to cook my beans. I was so pleased how fast they cooked & how well! I stirred them smooth using a pair of chopsticks. Wow! I learned why they get soaked, if not using crockpot method. WARNG TMI A few hours after eating out of nowhere, came the cannonball sized peros? perros? Not dogs but the other. A lot Going to make your chicken & cheese fried burritos TY

OMG! I just made this and they are out of this world! Originally, I didn't have any jalapenos so instead I added some of my homemade hot sauce. I ended up going to the store later on and got some jalapenos. I put one in there after about halfway through the cooking time. My charro beans came out spicy but I don't mind that one bit since I love spicy food. Thanks for sharing this recipe.

tried this recipe today, for the first time. OMG! I didn't have bacon on hand, but instead I added a bit of fat leftover from when I made chicken adobo. I think any fat would work, but a flavorful one is best. anyway, these are hands-down the best! I ate them simply, with homemade soft flour tortillas (also your recipe) and some grated cheese, and that peasant's meal felt like a feast.
